Recipes


Apple Cake

Serves 10-12

Ingredients
7oz plain flour
2 tsp baking powder
1/4 pt milk
2 tsp cinnamon
2-3 eating apples
4oz margarine
7oz caster sugar
icing sugar/icing/flaked almonds etc to decorate if desired

Method
Grease and line a 10-inch square tin
Thinly slice the apples
Arrange apples over base of pan
Whisk egg and sugar together until creamy
Heat milk and margarine in microwave until margarine has melted
Stir milky mixture into egg/sugar
Fold in remaining ingredients
Pour onto apples
Bake at 180 for 20 minutes, then reduce temperature to 160 and cook until film and golden brown (another 15-30 minutes)
Decorate as desired
Serve hot/cold with cream
